Introducing David Skerry, our new Head Chef

We are thrilled to welcome and introduce you to the new Head Chef here at The Forge, David Skerry.

David brings a wealth of knowledge with him, having worked in Michelin starred restaurants, on six-star cruise liners and even at Buckingham Palace. 

With the introduction of David’s new seasonal menu on 2nd May, we caught up with the new man in charge of the delicious dishes available at The Forge in an exclusive interview.

How did you get into cooking?

I started as a Kitchen Porter back in 2006 while I was studying law. That’s where my passion for cooking really kicked off. I remember asking the head chef if I could have a go at cooking. Maybe I didn’t word it very well because he replied with “no, this is not a toy!” He was probably right but this gave me the drive and courage to leave Law School and pursue a career in cooking.

How did the jump from law to the kitchen go?

It went really well, but it was hard work. I was used to the long hours in Law School… it prepared me for working in a kitchen. I worked very hard, learned off everyone I could and made my way up the ranks form Kitchen Porter Head Chef by the time I was 26 years old.

Where did your career go from there?

I worked mainly in fine dining restaurants, and I ended up working in Thomas Keller’s kitchen on a six-star cruise line. It was a brilliant experience and I enjoyed it, but I was ready to for a more stable life. That’s when I went to London to work in one of Gordon Ramsay’s Michelin starred restaurants. It was while I was there that I had the opportunity to cook at Buckingham Palace – that was great honour and something I won’t forget.

Why a move to The Forge?

After spending so much time in major cities, I thought it was time to live in a calmer environment and Cheshire was the prime location. When I heard that The Forge Restaurant was looking for a new Head Chef, I did my research and thought it was a great fit. Both the The Forge and Hotel Indigo Chester will allow me to achieve even more of my professional goals.

What are your ambitions for The Forge?

The restaurant has a great reputation in Chester. It serves amazing food, but the sky is the limit really. We have an amazing kitchen, an amazing team and I can’t wait to help this great restaurant continue to grow and improve. We will serve even better food to our guests and aim to become the number one restaurant in Chester.
